Black Bean Chicken w/ Wild Rice

Gluten & Dairy Free

A really easy recipe you can use with simple, staple ingredients.


boneless chicken breasts
can of black beans
garlic (minced)
onion (chopped)
olive oil
salt & pepper
chili flakes
wild rice mix
earth balance (or butter)

Salad & Dressing
romaine lettuce
cherry tomatoes
olive oil
lemon juice
salt & pepper

The rice..

  • Pour 2 cups of wild rice in a pot.
  • Fill the pot with water, leaving about a cm inch water line above the rice.
  • Cover pot, bring to a boil (about 5 minutes).
  • Reduce heat and simmer until water has evaporated (about 20 minutes).
  • Stir in 2 tablespoons of earth balance, salt & pepper to taste.

The chicken..

  • Heat large skillet with olive oil on medium heat.
  • Add minced garlic and chopped onions. Saute for about 3 minutes, be generous with the olive oil.
  • Add boneless chicken breasts. Brown both sides of the breast.
  • Add an entire can of black beans (liquid included).
  • Cover skillet and let simmer until chicken is thoroughly cooked (about 10-15 minutes).
  • Add chili flakes, salt & pepper to taste. For extra spice and color, add some jalapenos or chopped red peppers.

The salad..

  • Chop the romaine lettuce, onion, celery and cherry tomatoes.
  • Toss together with 1/2 part olive oil, 1/4 part lemon juice, 1/4 part tamari.
  • Salt & pepper to taste.
